Cuisine with the colours and flavours of the Basque Country at the table of the Saint Sylvestre restaurant in Aldudes

Behind the superb landscapes of the Aldudes Valley lies a remarkable terroir. Respecting the environment and with concern for animal well-being, renowned local AOP products are produced, such as the famous Kintoa pork, Banka trout, Ossau Iraty cheese and the iconic Irouléguy wine. Quality products that the talent of our chef Cédric Baudour sublimates for the greatest pleasure of your taste buds. Favouring local produce, he sources his supplies from farms in the valley where he raises his own animals and from producers whose quality of work he knows. Everything here is homemade. An authentic cuisine crafted with finesse that invites you on a real journey to discover the beautiful Basque specialties: free-range lamb shoulder, Kintoa pork loin, the famous Banca trout and the traditional piperade are just a glimpse. of the entire range of dishes offered to you.

Tasty dishes that you can enjoy comfortably seated in the pleasant contemporary room of the restaurant or in season, under the open terrace.

Trout from the Banca fish farm
Lamb from the Asketa des Aldudes farm
Kintoa pork from Pierre Oteïza des Aldudes
Beef from the Burubeltx farm in Urepel
Cold meats (sausages, chorizos, Aldudes ham, etc.), from the Pierre Oteïza des Aldudes house
Sausages, black puddings, rillettes, pâtés, ham aged for at least 24 months come from pigs raised on the Uhaldea des Aldudes farm. These are transformed with a masterful hand by our chef Cédric Baudour.
Breasts, foie gras, confits...all produced in-house, come from ducks that we raise at the La Bienvenue farm in Gamarde Les Bains.

99% of our production is local or homemade
We are not a farm inn, but 3/4 of our products come from local farms.

Our Auberge Restaurant St Sylvestre in Aldudes Pays Basque is the ideal place for your little break after your visits to the Banca fish farm or the Oteïza house.

Nothing like one of our menus specially designed for groups to perk you up!

The property's parking lot can easily accommodate 1 or 2 buses.

The capacity is 68 seats inside. If you would like to organize an outing and the group is larger, do not hesitate to contact us. Depending on the time of year, we can add cover under the pergola.
